Chinese egg crate jars (also known as egg cookers, egg holders, century pots, etc.) were invented some time in the 17th Century as a method of carrying, preserving, and even creating century eggs, a unique alkalized preserved delicacy using clay, ash, salt, quicklime, and the eggs of ducks, chicken, or quail. They were primarily earthenware or terracotta pots and jars which the eggs would be packed into, often given individual symbols or features to help distinguish them at market or in large shipments. Often unmarked by the makers, they are collected for their uniqueness and their fascinating place in culinary history.
